The village in the Giudicarie

The urban structure of the village, located 800 meters above sea level, is almost unique: it has seven districts, each with its own chapel and united by the beauty of the place and the wood and stone architecture. There are seven historical cores, and in all there are now as many as nine. These are individual cores capable of composing a single community.. Senaso, Berghi and Moline are the three hamlets where alpine architecture is best preserved. Enhancement of local materials and peasant ingenuity are assured here. Arches, vaults, loggias, balconies, portals, trellises, cobblestone paving: all contribute to making San Lorenzo a treasure trove of architecture of the past.

The streams of the Giudicarie are among the most fishy waterways in Europe. And it is precisely in these areas of Western Trentino that fish farming of the highest quality is widespread. The As.Tro consortium was founded in 1988 on the initiative of 22 trout-farming members, which now number 25. There are about 70 fish farms, concentrated mainly in the Giudicarie, Rendena, and Chiese valleys. Production is as varied as ever and always growing: rainbow and brown trout (50.000 quintals), Arctic char (4.000 quintals) e ora anche carp (100 quintals) on the menu of As.Tro,which markets processed and semi-processed products in packaging and sizes to suit all tastes. It is always lean meat, consistent, digestible and rich in noble proteins, mineral salts and Omega 3.
