This traditional cheese made with local ingredients is the result of the work of the Val di Fassa Dairy farmers. It used to be made in the alpine pastures or in the mid-mountain barns or shifting dairies. Its tradition has been handed down to us.
A special treatment of the rind makes Cuor di Fassa a tasty cheese, yet suitable for even the most delicate palates. The product is completely free of additives and preservatives. In the past, the rind represented the food base and an indispensable source of noble proteins for peasant diets, along with polenta.
