The territory
It comes from very high quality grapes grown in double pergola vineyards in the heart of the Rotaliana plain, with an average age of 50 years. The harvest yield of about 90 quintals per hectare produces grapes of the highest quality. The orchards grow in a soil that is always well drained and consisting of multiple layers of pebbles, gravel and sand.
The processing
Grape harvesting begins roughly between mid-September and early October and is carried out strictly by hand by farmers. After the fresh product is delivered, the vinification phase begins with fermentation of the must in tall French oak vats, which is followed by maturation in new barriques for at least 24 months. The pairings
Clesurae improves its quality characteristics over time. When purchased, the wine is ready to be uncorked in the company of friends, although storage for a few years in the home cellar will yield great surprises. This label goes well with grilled cuts of red meat produced by the Trentino Breeders Federation, as well as with game and hard cheeses made in the dairies of Trentino. It is a wine for meditation.
