The territory
It comes from the best simple pergola vineyards in the Cembra Valley, where the Müller Thurgau variety has found its home. Here, the high temperature ranges, the mineral composition of the soils and the people's attention make it possible to obtain the highest quality grapes for this selection.
The processing
Winemakers harvest strictly by hand in the hilly and often inaccessible vineyards of the Cembra Valley, usually in early September. Following delivery to the winery, the grape must is fermented in stainless steel barrels and rests on fine yeasts. This is followed by a period of bottle aging lasting 3-4 months.
The pairings
Lightly aged Müller Thurgau is appreciable for its intense aromas and distinct minerality, typical of the high hillside vineyards where it originates. Aged Müller Thurgau, on the other hand, acquires elegance through its acidity. It pairs perfectly with vegetable dishes, grilled white meats produced by the Trentino Breeders Federation, sea or alpine lake crudités.
