The territory
Guyot and Trentino pergola are the vineyards of “R” Riserva Brut Trentodoc. The grapes ripen in the valleys and on the cool hills with a high viticultural vocation that surround the Rotaliana plain. Their soils are dry, medium-textured and tend to be clay or limestone.
","Winemakers harvest the grapes by hand approximately from late August to early September. White vinification is carried out with soft pressing of the grapes and fermentation of the must in both steel and small wooden barrels. A slow mousse takes place in spring and the subsequent maturation on the yeasts lasts at least 80 months. This is followed by remuage and disgorgement with the addition of liqueur d'expédition. Bottle aging lasts up to three months.
In its early years, the Riserva will be appreciated for its perfect synthesis of freshness and smoothness. Later it will offer greater roundness. It pairs well with appetizers and fatty cured meats produced by the Trentino Breeders Federation, as well as with shellfish and aged cheeses from Trentino dairies.
