The territory
It comes exclusively from double pergola vineyards in the Piana Rotaliana, which have an average age of more than 40 years. It comes from the best subzones including Pasquari, Novali and Pozze, whose soils are always well drained and consisting of multiple layers of pebbles, gravel and sand.
The processing
Harvesting - carried out strictly by hand by the winery's winegrower-members - begins indicatively in late September, much later than for the red label Teroldego. After the fresh product is delivered, the vinification and maturation phase begins with fermentation of the must in steel barrels and aging in French oak barriques for at least 24 months. This is followed by bottle aging for 6 months.
The pairings
In its early years, the Riserva Superiore will be appreciated for its perfect synthesis of freshness and smoothness. In the following years, for a greater roundness with a taste of cherry jam, sweet spices and cocoa. It goes well with roasted red meats produced by the Trentino Breeders Federation, as well as with hard and aged cheeses processed by the Trentingrana consortium.
