Valentini is made only from Chardonnay grapes that ripen on the high hills of Vallagarina. The vineyards are selected and low-yielding. They grow thanks to the care of the Cantina's member farmers in the highly suitable areas of Volano.
Harvesting and selection of the grapes is done by hand by Lagarina farmers. After conferring, careful temperature-controlled white vinification begins: yeast is added to the base wine and it is left to re-ferment in a bottle, following the strictest canons of the classic method. After more than 30 months of slow fermentation together with the yeasts, disgorgement takes place.
