The territory
Trentodoc Brut comes from chardonnay grapes that ripen in the high hills of Isera, from which the Vallagarina can be seen and where vintners cultivate the simple Trentino pergola and guyot. The soil is gravelly, calcareous, sandy and with good drainage capacity, and gives the wine a characteristic mineral aroma.
The processing
Farmers harvest the grapes in the first decade of September with the support of family members and friends for whom the harvest is an indispensable ritual. White vinification involves static decantation of the must and a temperature-controlled fermentation. This is followed by aging in steel barrels before maturation on the yeasts for more than 30 months.
The pairings
Trentodoc Brut can be enjoyed as an aperitif with friends, or accompanied by Grana del Trentino cheese, but it can also support the entire meal with great pleasure.
