The territory
Riserva Vervè comes from grapes from vineyards in the sedimentary area of Roveré della Luna, which has a characteristic fan shape and whose soil is of limestone origin. It also comes from the upper Cembra Valley, which is of porphyritic origin. The average altitude of the vineyards is 500 meters.
The processing
Harvesting is done strictly by hand. Soft pressing of the clusters is done following the classic method. The must ferments in French oak barriques and tonneaux, where it is aged for about 6 months until the following spring. This is followed by blending and refermentation in a bottle. The next stage is maturation on the lees and lasts more than 60 months. The final stages involve disgorgement and the addition of liqueur d'expedition.
The pairings
The blend of grapes that gives life to Riserva Vervè makes this Trentodoc wine creamy and over-the-top. It is capable of enhancing so many traditional Trentino dishes, from first courses to main courses of fish and white meats and even very complex dishes like the ones from the valleys' farms that stretch in the shadow of the Dolomites.
