The territory
The selected clusters ripen in double pergola vineyards, mainly in the municipalities of San Michele all'Adige and Mezzolombardo. The organoleptic characteristics of the wine are favored by the fresh, medium-deep, sandy soil of the Piana Rotaliana.
The processing
Harvesting is done strictly by hand by the winery's member-vintners, and usually begins in late August. The wine is produced only in the best vintages, following fermentation and maturation of the must in wooden barrels for 6-8 months: this combines freshness and delicate smoothness. This is followed by aging in bottles for a period of 3-4 months.
The pairings
The lightly aged Pinot Bianco Cortuta is appreciated for the perfect synthesis of freshness and smoothness. It will later give creamy roundness, but without losing its intriguing mineral verve. We recommend pairing this label with soups or pasta dishes with shellfish and main courses of fresh or saltwater fish.
