Celeriac is round in shape, rough to the touch, brownish in color, and has white flesh. Unlike common celery, it has a milder flavor that makes it ideal as a basic ingredient in the preparation of many dishes as well as a condiment to flavor foods.
In the kitchen it lends itself to being prepared either raw in fresh, rich salads or cooked as an excellent side dish when baked, fried or au gratin. It can, finally, become the main ingredient in a very wide variety of soups and stews.
