The territory
The grapes come from the Winchel vineyard located in the southernmost sedimentary area of Roveré della Luna. This territory has a characteristic fan shape. The soil in which the vineyards grow originates from the continuous input of detrital material from the Molini stream that flows near the village.
The processing
Farmers carry out the harvest strictly by hand, selecting the best bunches directly in the countryside. This is followed by low-temperature maceration in the winery: the grapes are pressed long and soft to promote aromatic extraction. After natural static settling, the must ferments partly in stainless steel tanks and partly in French oak barriques and tonneaux. At that point, a period of 8-10 months of aging on the yeasts begins.
The pairings
Particularly fitting is the pairing of Gewürtztraminer with Arctic char produced on farms in the valleys of Trentino. The full, aromatic taste, good structure and long persistence make it a good match even with non-creamy desserts such as Monte Bondone cake.
