Mezzano Trentino cheese is made exclusively in the dairies of Val di Fiemme and Primiero, around 1,000 meters above sea level. The cheesemaker skims the milk milked in the evening by adding it to the morning's whole milk to make a tasty cheese. The aging process, which ranges from 4 to 8 months and more, makes it a cheese with an intense flavor, tending toward spicy.
The raw milk used to produce Mezzano Trentino high-mountain cheese comes from cows fed on premium products. This cheese is great for meals and is free of additives and preservatives. Its more aged version is also excellent for flaking or grating, and brings pleasantness and delicacy to the dishes to which it is added.
