Alpine trout and char from traditional farms distributed throughout the valleys of Trentino are born and raised in glacier waters. They grow following and respecting the rhythms of nature: that's why they are healthy and their meat is tasty, tender and lean. Astro trout are the only ones in Italy that can boast the prestigious European recognition of Protected Geographical Indication (PGI) and the "Friend of the sea" certification, which is awarded to sustainable fish products.

Trout and char grow according to natural rhythms, in cold, clear waters monitored with constant chemical and biological analysis. This monitoring allows for real-time assessment of the health of the environment and fish fauna. Trentino is historically the cradle of Italian trout farming, thanks to streams fed by high-altitude springs. The first trout farms emerged between the late 19th and early 20th centuries in Alto Garda, Giudicarie, and Val di Fiemme. After an initial union in 1975, the producers consolidated their cooperative approach with the creation of Astro, strengthening the quality, awareness, and distribution of the product.
