Val di Fiemme - Cavalese dairy

We are the custodians of the Val di Fiemme dairy tradition and our family farms, at the bottom of the valley or in the mountain pastures, represent the passion and daily effort of mountain agriculture. Our cheeses are handmade with care and dedication, skill and passion. An ancient knowledge that has been handed down for generations and which makes them unique and inimitable like our valley.

Production is based on family-run farms in the valleys and on mountain pastures, with seven dairy farms for cows and one dairy farm for goats operating from May to September. In summer, the animals feed on fresh, aromatic herbs, resulting in straw-colored "Malga" cheeses with a typical mountain flavor. The entire supply chain takes place within the members' own land, guaranteeing the freshest milk from a pristine environment. Today, over 80 members follow rigorous guidelines, using natural feed and processing without preservatives, colorings, or anti-fermentation agents. Respect, family, trust, and care for milk are the values ​​that guide a cooperative project with deep roots and an eye to the future.
