Carne Salada is prepared faithfully following tradition.
We use beef topside, completely deprived of fat.
The meat is dry marinated with coarse salt, garlic and black pepper.
It is then aged for about a month with juniper and laurel, which enhance its aromas and softness.
The absence of brine preserves the naturalness of the process and the authentic taste of the meat.
