Juniper berries harvested at the altitudes of the Fiemme Valley preserve their flavor to the fullest, giving the grappa its aromatic and fragrant taste. The production process involves cold infusion in white grappa for 30 to 60 days (being an artisanal product, it does not follow a standardized procedure but requires periodic tasting to determine the shelf life). After infusion, the grappa is bottled undiluted, and a juniper sprig with the berries is added to the bottle, continuing to impart flavor until consumption.

The historic Pilzer distillery in Val di Cembra prepares it for us with juniper berries collected in the woods of Val di Fiemme (Trentino - Alto Adige).
