Cheese made with raw, semi-fat milk, according to our rural tradition. After about nine months of aging, it becomes semi-firm, with sparse holes and a bold, savory flavor.

Raw milk product not suitable for children under 10 years of age, pregnant women, the elderly, and immunocompromised individuals.

I formaggi nostrani, quindi quelli a pasta semidura o abbastanza stagionati, si conservano bene nel sottovuoto per circa un mese, tenendo controllata l'integrità della confezione.

Anche semplicemente avvolti nel loro incarto rimangono buoni a lungo, qualora dovesse seccare il taglio, basterà rinnovarlo tagliandone via una sottilissima fettina.

In ogni caso conservalo in frigorifero al fresco.
