Vezzena is flavorful, slightly spicy, and has a semi-hard, semi-cooked paste. It is produced by the Sabbionara Cheese Factory. It is an excellent cheese for eating and grating, and is made from raw, partially skimmed milk.

This cheese was never missing from the table of Emperor Franz Joseph I of Austria. Even after a long maturation, Vezzena retains an exceptionally smooth flavor and buttery texture, releasing distinctive aromas depending on the grazing season.

Technical information and product specifications.

A full 100 liters of milk are needed to make one wheel of Vezzena. This product—completely free of additives—comes exclusively from cows fed a non-GMO diet. It can be used in two ways: as a table cheese, to round off a meal, or grated, but it can also be used to enhance pasta dishes and white meat dishes. It pairs exceptionally well with full-bodied red wines or Vino Santo.
