ThesmacafamIt is a typical dish of the Trentino tradition, born as a recipepoor but tasty, often prepared in the period ofCarnivalThe name means “hunger crusher” and it tells its hearty soul well. Baked in the oven and similar to a rustic savory pie, it is perfect hot or cold, asappetizers,secondor snack.

Preparation:

  • Slice the onion and sauté it in a pan with oil and a spoonful of water.
  • Add the diced seasoned lucanica and the diced smoked pancetta , browning everything for 10 minutes.
  • Melt the Trentino butter over very low heat and let it cool.
  • Mix the eggs and milk in a bowl, then add the melted butter, salt and pepper .
  • Sift the two flours (Type 1 and Buckwheat) and whisk until there are no lumps.
  • Add the meat and onion mixture to the batter and mix well.
  • Pour the mixture into a greased pan (30x20 cm).
  • Bake in a static oven at 180°C for about 50 minutes until golden brown.
  • Remove from the oven and let it rest for a few minutes before cutting into cubes
