Smacafam
Ingredients:
- 200 g seasoned Lucanica ,
- 120 g smoked bacon ,
- 300 g type 1 flour ,
- 50 g buckwheat flour ,
- 500 ml milk ,
- 20 g Trentino butter ,
- 2 eggs ,
- 1 white onion ,
- ½ tablespoon fine salt ,
- black pepper to taste,
- extra virgin olive oil .

Preparation:
- Slice the onion and sauté it in a pan with oil and a spoonful of water.
- Add the diced seasoned lucanica and the diced smoked pancetta , browning everything for 10 minutes.
- Melt the Trentino butter over very low heat and let it cool.
- Mix the eggs and milk in a bowl, then add the melted butter, salt and pepper .
- Sift the two flours (Type 1 and Buckwheat) and whisk until there are no lumps.
- Add the meat and onion mixture to the batter and mix well.
- Pour the mixture into a greased pan (30x20 cm).
- Bake in a static oven at 180°C for about 50 minutes until golden brown.

Remove from the oven and let it rest for a few minutes before cutting into cubes
