Smoked pancetta is made from the belly of the pig and is characterized by a typical alternating white fat and red veins of muscle. The process involves careful salting, seasoning with aromatic herbs and pepper, and a gentle smoking process using fir or beech wood, mostly cold-smoked, with hot smoking occurring at temperatures above 80°C. Curing completes the process and can last from a week to several months, giving the product an intense and balanced flavor.
