Famiglia Cooperativa Brenta Paganella

The Brenta Paganella Family Cooperative was one of the first consumer cooperatives in Trentino. Since 1893, it has been a point of reference for the communities of Banale and Paganella. It is the custodian and producer of Trentino's only SlowFood presidium cured meat, the Ciuìga del Banale, typically made with fine pork and local turnip.

Founded in San Lorenzo in Banale, at the foot of the Brenta Dolomites, the cooperative is deeply rooted in a richly attractive area between Molveno, Terme di Comano, and Garda. Ciuìga originated in the late 19th century as a "poor man's" cured meat, created by combining pork and local turnips to make the most of every available resource. Today, it is a recognized excellence, the only Slow Food Presidium in Trentino, and a symbol of the local gastronomic culture. The current cooperative stems from the 1986 unification of San Lorenzo in Banale, Andalo, and Molveno, with subsequent additions of other local businesses. Combining modernity with cooperative roots, it continues to provide daily service to communities, protecting their identity and traditions.
