Its cylindrical shape weighs approximately 5 kg, and its compact, white interior features green-blue streaks. The molds inside are due to the blue-veining process, that is, the addition of a Penicillium fungus to the milk; during the ripening process, these molds are activated by the air, piercing the cheeses with special needles.
