The hop flowers harvested wild in the Fiemme Valley preserve their flavor to the fullest, giving the grappa a distinctive, bitterish taste. The production process involves cold infusion in white grappa for 30 to 60 days (being an artisanal product, it does not follow a standardized procedure but requires periodic tasting to determine the shelf life). After infusion, the grappa is bottled undiluted.

The historic Pilzer distillery in Val di Cembra prepares it for us with hop flowers collected in the woods of Val di Fiemme (Trentino - Alto Adige).
