TheTrentodoc “R” Extra BrutMade from Guyot and Trentino pergola grapes from the Piana Rotaliana, on dry, calcareous soils. Hand-harvested between late August and early September, the grapes ferment in stainless steel, undergo secondary fermentation, and remain on the lees for at least 18 months, followed by riddling, disgorgement, and three months of bottle aging.
