Ciuiga del Banale

Ciuìga del Banale is a typical sausage from the San Lorenzo in Banale area whose origin seems to date back to the mid 1800s. It is a sausage made of little meat and a lot of turnips, a poor but tasty sausage, born in a peasant context from the resources laboriously obtained from the land. Today La Ciuiga del Banale is a Slow Food presidium for which the Brenta Paganella Cooperative has exclusive production and marketing rights.

Ciuìga del Banale originated in the 19th century as a humble cured meat made from white turnips and less noble cuts of pork, smoked in domestic fireplaces. Today, it has become a quality product, made with finer cuts of meat, a smaller amount of turnips, Teroldego instead of blood, and natural beech smoking, while maintaining its distinctive flavor.

Flavored with pepper and garlic and boasting a smoky, rounded flavor, it's eaten cooked and pairs well with potatoes, sauerkraut, polenta, cabbage, ragù, dumplings, risotto, and barley risotto. It pairs best with full-bodied Teroldego or Cabernet Sauvignon.
