Produced from large (5–7 kg) cabbages grown at altitude, sauerkraut is salted after harvesting and left to ferment for around 60 days, then pasteurised and packaged in jars or cans.

Crispy, sweet, and aromatic, Trentino sauerkraut can be eaten raw, with extra virgin olive oil, salt, and vinegar, cooked as a side dish, or to accompany minestrone or polenta.
