Cuor di Fassa cheese

Gift a cheese with intense flavors and aromas that bring to mind the herbs and flowers of the mountains of Val di Fassa. Up there are raised the cows from whose milk Cuor di Fassa is born: a moist rind cheese made from raw, semi-skimmed milk. Its paste is semi-hard and semi-cooked.

Produced by the farmers of the Caseificio Val di Fassa, this is the traditional cheese of the area where it is made. It was once produced on mountain pastures, in barns high up in the mountains, or in shifting dairies.
