Fontal di Cavalese cheese

Fontal di Cavalese is a semi-hard, semi-cooked cheese made from raw milk by the Social Dairy of Val di Fiemme. It has special organoleptic characteristics related to the freshness and quality of the milk used. The wheels have a thin, elastic rind, while the paste is soft, compact and white in color.

The term Fontal came into use in the 1950s and is a contraction of Fontina and Bavarian Emmental. Fontal is aged for one to two months and is completely free of additives and preservatives.
