TheTrentodoc BrutMade from Chardonnay grapes grown on the high hills of Isera, where the winemakers use Trentino pergola and Guyot training systems. The gravelly, calcareous, and sandy loam soil lends the wine an elegant mineral aroma. Harvesting, done by hand in the first ten days of September, is a family ritual. After white vinification with decantation and temperature-controlled fermentation, the wine ages in steel barrels and on the lees for over 30 months, producing refined and complex bubbles.
