The vineyards of theEnantioThey grow on the western hills of Avio, near the Sabbionara Castle. Hand-picked in the third ten days of October (sometimes even under the snow), only the selected grapes become wine. Vinification takes place using the classic method: fermentation in steel, racking into barrels and barriques, and a long aging in bottle for a year, for a total offour yearsfrom the harvest to the glass.
