Speck

Speck is a typical local cured meat and is particularly soft and sweet. Compared to Speck Cuore, made from the rump of the pig, traditional Trentino speck is made using the hind leg of the pig. Seasoning and smoking give it an intense, flavorful taste and a delicate texture at the same time. This speck has the Qualità Trentino seal of approval. Ingredients: 100% Italian pork, salt, pepper, garlic, juniper, rosemary, dextrose, sucrose. Antioxidant: E300. Preservative: E250-E252.

The meat is cured with salt, pepper and juniper, then salted, smoked with juniper and beech wood and finally aged for 4–6 months.
